Let Us Talk about Bread, Baby
A new micro trend we see in our society is bread. After the anti-bread movement, we believe more and more in old-school basic products – products we have used during our whole history, according to traditional methods made by hand. The government policy changes, we got better indication and guidelines about becoming healthier with normal diets. Society needs simplicity, clarity and transparency. Traditional pure bread is becoming our new best friend.
Old-school baked bread
New lunch and dinner places are coming from the ground. There interior feels homey and intimate. They look smaller than the fast food chains that ruled the way of eating from families, students, and friends for a very long time. Maybe we always wanted to do better, especially after having more knowledge about food productions, but budget was a countercheck aliquot. Now new eating places serve fresh and homemade products for an accessible price. I also see uncover no eating places (old and new) without bread on their menus, during the day as well during the evening. Bread is discovered again to enjoy our eating system. After having a hangover from trying to avoid bread or any other carbs.

In the TV programme BROOD (bread written in Dutch), Robert is discovering journals, secrets and foundations of bread. He visits genuine bakers all over the world to listen to their stories and ways of baking bread and the source of their used products. Robert shares the roots of bread with the viewer. By doing this, bread got his own TV-show, where it is fully in the picture. It shows the increasing attention for hand craft.

Another signal is ‘BROUWBROOD,’ literally translated as ‘brew bread.’ This kind of bread is made from remainders beer brewers grains. It contains less sugars, more dietary fibers and more proteins than usual bread flour. Because of the use from remainders beers grains, the product is durable, tasteful, new/ unique. A good start to improve world.
After we lost extraction of food, we want to take the control back. The story and function behind products are becoming the most important elements in the future of food. We will be picky in what we choose to eat. But if we want to get the whole story (trend Transparency) will depend on the openness of companies. These problems we see in the appearance industry as well. Abuse and bad working conditions are hardly to control. The solution won’t be making everything local, because dependency creates prosperity. We need to discover and recognize one another qualities. Give each other space and grant each other favoured positons. Teamwork towards food is the solution to distinguish the good from the bad.
